- 1 Tbsp. butter
- 1 large sweet onion
- peeled and chopped
- 2 cloves garlic
- pressed
- ½ pound boiling potatoes
- about 3 medium
- peeled and cut into small cubes
- 2 medium carrots
- cut into small pieces
- 2 Tbsp. maple syrup
- 4 pears cored
- and cut into 1-inch chunks
- 1 teaspoon fine sea salt
- 2 tsp. chopped fresh thyme
- 1 tsp. freshly ground nutmeg
- 2 tsp. Grey Poupon Dijion Mustard
- 3 cups vegetable or chicken broth
- Creme Fraiche
- Red pepper flakes

Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and pressed garlic, sautéing until the onions are translucent.
- Stir in the boiling potatoes and carrots, cooking for an additional 5 minutes.
- Add the maple syrup, chopped pears, sea salt, thyme, nutmeg, and Dijon mustard, mixing well.
- Pour in the vegetable or chicken broth and bring to a boil, then reduce to a simmer for about 20 minutes, until the vegetables are tender.
- Using an immersion blender, carefully blend the soup until smooth.
- Serve hot, garnished with a dollop of creme fraiche and a sprinkle of red pepper flakes if desired.
Notes
For a creamier texture, adjust the amount of broth added. You can also enhance the flavor with garlic croutons on top.
