This Easy Pear Potato Soup is a delightful blend of sweet pears and hearty potatoes, perfect for a cozy meal. The addition of maple syrup and Dijon mustard brings a unique twist to this comforting soup.

- 1 Tbsp. butter
- 1 large sweet onion
- peeled and chopped
- 2 cloves garlic

- ½ pound boiling potatoes
- about 3 medium
- peeled and cut into small cubes
- 2 medium carrots
- cut into small pieces
- 2 Tbsp. maple syrup
- 4 pears cored
- and cut into 1-inch chunks
- 1 teaspoon fine sea salt
- 2 tsp. chopped fresh thyme
- 1 tsp. freshly ground nutmeg
- 2 tsp. Grey Poupon Dijion Mustard
- 3 cups vegetable or chicken broth
- Creme Fraiche
- Red pepper flakes

Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, cooking until the onion becomes translucent.
- Stir in the boiling potatoes and carrots, cooking for an additional 5 minutes.
- Add the maple syrup, pears, sea salt, thyme, nutmeg, Dijon mustard, and broth. Bring to a boil, then reduce heat and simmer for about 25 minutes, or until the vegetables are tender.
- Blend the soup until smooth, either using an immersion blender or by transferring in batches to a regular blender.
- Taste and adjust seasoning as needed. Serve hot, topped with a dollop of creme fraiche and a sprinkle of red pepper flakes if desired.
Notes
For a creamier texture, blend the soup longer or add more creme fraiche. Customize the herbs according to your taste.
