  • 5 eggs
  • 2 cups half and half
  • 2 1/2 cups peaches (peeled and sliced into 1/2-inch thick wedges)
  • 1 1/2 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp lemon juice
  • 1/4 tsp salt
  • 1/4 cup flour
  • 1/4 cup brown sugar
  • 2 tbsp butter (chilled and cut into small pea-sized pieces)
  • 1/2 tsp cinnamon
  • powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together the eggs, half and half, vanilla, cinnamon, nutmeg, lemon juice, and salt.
  3. Add the brioche cubes to the egg mixture and gently fold to combine, ensuring the bread is well coated.
  4. Layer half of the peach wedges in the prepared baking dish, pour the brioche mixture over the peaches, and top with the remaining peach slices.
  5. In a separate bowl, combine flour, brown sugar, butter, and cinnamon to make the crumble topping. Mix until crumbly and sprinkle over the top of the French toast bake.
  6. Bake for 30-35 minutes or until the custard is set and the top is golden brown.
