2 tbsp turbinado sugar


Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine graham cracker crumbs, 1/3 cup sugar, and melted butter. Press this mixture into the bottom of a greased 9-inch springform pan to create the crust.
  • In another bowl, beat softened cream cheese with 1/2 cup sugar until smooth. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract and sour cream until combined.
  • Pour the cheesecake mixture over the prepared crust and set aside.
  • For the peach filling, toss sliced peaches with 1/3 cup sugar, cornstarch, cinnamon, and nutmeg. Spoon this mixture over the cheesecake layer.
  • In a separate bowl, combine flour, 1/2 cup sugar, baking powder, and salt. Cut in the cubed cold butter until the mixture resembles coarse crumbs. Sprinkle this cobbler topping over the peaches.
  • Sprinkle turbinado sugar on top for added crunch.
  • Bake for 30-35 minutes or until the top is golden and the cheesecake is set.
  • Allow to cool before refrigerating for at least 4 hours before serving.
