5 peaches cut into wedges
125 g (1 cup) fresh raspberries
75 g (½ cups) caster sugar
90 g (½ cups) cold butter salted or unsalted
90 g (â…” cups) caster sugar
140 g (1 cup) plain flour
1 teaspoon baking powder
2 teaspoons milk
2 tablespoons flaked almonds
Zest of 1 lemon
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the peach wedges, raspberries, and 75 g of caster sugar. Place the mixture in a baking dish.
- In another bowl, mix the cold butter, 90 g of sugar, plain flour, baking powder, milk, flaked almonds, and lemon zest until crumbly.
- Sprinkle the cobbler topping over the peach and raspberry mixture.
- Bake for 30 minutes or until the topping is golden brown and the fruit is bubbly.
- Let cool slightly before serving.
