150 g Greek yoghurt

2 medium orange zest
300 g almond flour
1 tsp baking powder
2 handfuls flaked almonds
Instructions
- Preheat your oven to 180°C (350°F) and line a cake tin with parchment paper.
- In a large bowl, beat the egg whites until stiff peaks form. In another bowl, whisk together the egg yolks, xylitol, Greek yogurt, almond extract, and orange zest until well combined.
- Gradually fold the almond flour and baking powder into the egg yolk mixture until smooth.
- Carefully fold the beaten egg whites into the cake batter until fully incorporated.
- Pour the batter into the prepared cake tin and sprinkle the flaked almonds on top.
- Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool before removing it from the tin and serving.
Notes
