- 2 cups fresh strawberries hulled and sliced
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 2 tablespoons granulated sugar
- 1 tablespoon fresh lemon juice
- 2 cups heavy whipping cream cold
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 8 ounces mascarpone cheese softened
- 1 store-bought pound cake or angel food cake cut into 1-inch cubes (about 4 cups)
- 1/4 cup berry juice or simple syrup (optional)
- 1/2 cup crumbled shortbread cookies or graham crackers
- Fresh mint leaves for garnish (optional)
- Extra berries for the top layer
Instructions
- In a medium bowl, combine the fresh strawberries, blueberries, raspberries, granulated sugar, and lemon juice; mix well and set aside.
- In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Gently fold in the softened mascarpone cheese until well combined.
- In a trifle dish or individual cups, layer half of the cake cubes at the bottom, followed by half of the berry mixture, and half of the creamy mixture.
- Repeat the layers with the remaining ingredients, finishing with a layer of the creamy mixture.
- Sprinkle crumbled shortbread cookies or graham crackers on top and add extra berries for garnish.
- Chill the trifle in the refrigerator for at least 1 hour before serving.
Notes
Feel free to substitute the berries with your favorite fruits, and you can use berry juice or simple syrup to moisten the cake layers if desired.
