Description

This Easy No-Bake Berry Trifle is the perfect Labor Day dessert, combining layers of fresh berries, creamy mascarpone, and soft cake for a delicious, hassle-free treat.


Ingredients

  • 2 cups fresh strawberries hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon fresh lemon juice
  • 2 cups heavy whipping cream cold
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces mascarpone cheese softened
  • 1 store-bought pound cake or angel food cake cut into 1-inch cubes (about 4 cups)
  • 1/4 cup berry juice or simple syrup (optional)
  • 1/2 cup crumbled shortbread cookies or graham crackers
  • Fresh mint leaves for garnish (optional)
  • Extra berries for the top layer

Instructions

  1. In a medium bowl, combine the fresh strawberries, blueberries, raspberries, granulated sugar, and lemon juice; mix well and set aside.
  2. In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  3. Gently fold in the softened mascarpone cheese until well combined.
  4. In a trifle dish or individual cups, layer half of the cake cubes at the bottom, followed by half of the berry mixture, and half of the creamy mixture.
  5. Repeat the layers with the remaining ingredients, finishing with a layer of the creamy mixture.
  6. Sprinkle crumbled shortbread cookies or graham crackers on top and add extra berries for garnish.
  7. Chill the trifle in the refrigerator for at least 1 hour before serving.

Notes

Feel free to substitute the berries with your favorite fruits, and you can use berry juice or simple syrup to moisten the cake layers if desired.
