These Easy Mini Football Brownie Bites are the perfect Game Day dessert, combining rich, fudgy brownie goodness with festive decorations that are sure to impress your guests.


Ingredients

  • 1/2 cup (113g) unsalted butter

  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) light brown sugar

  • 1 teaspoon vanilla extract
  • 1/2 cup (60g) all-purpose flour
  • 1/3 cup (30g) unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon instant coffee powder or espresso powder (optional)
  • 1/2 cup (113g) unsalted butter
  • softened (for frosting)
  • 1 1/2 cups (180g) powdered sugar
  • 1/4 cup (20g) unsweetened cocoa powder (for frosting)
  • 2 tablespoons heavy cream or whole milk
  • 1/2 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • White icing or melted white chocolate (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a bowl, mix the melted butter, granulated sugar, and brown sugar until well combined.
  3. Add the eggs and vanilla extract, mixing until smooth.
  4. In another bowl, combine the flour, cocoa powder, salt, and baking powder. Gradually add this mixture to the wet ingredients, stirring until just combined.
  5. If desired, stir in the instant coffee or espresso powder for added depth of flavor.
  6. Spoon the brownie batter into the mini muffin pan, filling each cup about 3/4 full.
  7. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Remove from the oven and let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
  9. While the brownies cool, prepare the frosting by beating together the softened butter, powdered sugar, cocoa powder, heavy cream or milk, vanilla extract, and a pinch of salt until smooth and creamy.
  10. Once the brownies are cool, frost them with the chocolate frosting and decorate using white icing or melted white chocolate in a football design.

Notes

For an extra kick, feel free to add nuts or chocolate chips to the brownie batter. These mini bites are great for parties and can be customized with your favorite toppings.
