- 1.5 lbs boneless
- skinless chicken thighs
- 2 medium sweet potatoes (about 500g / 1.1 lbs)
- 3 tbsp maple syrup
- 2 tbsp Dijon mustard
- 2 tbsp olive oil
- 3 cloves garlic
- minced
- 1 tsp smoked paprika
- Salt and freshly cracked black pepper

- 1 tbsp fresh thyme
- chopped (or 1 tsp dried thyme)
- Optional toppings: toasted pecans or pumpkin seeds

Instructions
- Preheat your oven to 400°F (200°C).
- Peel and dice the sweet potatoes into 1-inch cubes, then toss them with 1 tablespoon of olive oil, smoked paprika, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for about 25-30 minutes, or until tender and golden, stirring halfway through.
- In a large bowl, combine the maple syrup, Dijon mustard, minced garlic, remaining olive oil, chopped thyme, salt, and pepper. Add the chicken thighs and coat them well.
- Place the coated chicken thighs on another baking sheet and bake in the oven for 20 minutes, or until cooked through and the juices run clear.
- Serve the maple Dijon chicken over the roasted sweet potatoes, topped with toasted pecans or pumpkin seeds and an extra drizzle of maple syrup if desired.
Notes
For added flavor, marinate the chicken in the maple Dijon mixture for a few hours or overnight before cooking. Adjust the sweetness by adding more or less maple syrup according to your taste.
