½ cup (113.5 g) butter

¼ cup (55 g) brown sugar

1 large egg yolk

1 tablespoon lemon juice (about half a lemon)

1 teaspoon vanilla

½ teaspoon salt

½ teaspoon baking powder

¼ teaspoon baking soda

1¼ cups (175 g) all-purpose flour

¾ cup (75 g) frozen raspberries

chopped small

Flaked salt

for sprinkling


Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, cream together the granulated sugar, brown sugar, and butter until light and fluffy.
  • Add the egg yolk, lemon juice, lemon zest, and vanilla; mix until combined.
  • In a separate bowl, whisk together the flour, salt, baking powder, and baking soda.
  • Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  • Fold in the chopped raspberries gently to avoid smashing them.
  • Drop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Sprinkle a little flaked salt on top of each cookie.
  • Bake for 10-12 minutes, until the edges are lightly golden but the centers are still soft.
  • Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
