Description

This Easy Grilled Shrimp Bowl with Avocado and Corn is a delicious and vibrant meal, perfect for warm weather dining. It features succulent grilled shrimp glazed in barbecue sauce, paired with a fresh avocado and corn salad, all served over fluffy couscous.


Ingredients

2 lb shrimp (peeled and deveined with tails left on)

2 tbsp vegetable oil

1 1/4 tsp salt

1 tsp smoked paprika

1 cup barbecue sauce

4 skewers

1/2 cup mayonnaise

2 tbsp sriracha

2 tbsp lime juice

1/4 tsp salt

2 avocados (diced into 1/2-inch cubes)

3 ears corn

1/4 cup cilantro

1/4 cup red onion (finely diced)

2 tbsp lime juice

2 1/2 tbsp olive oil

salt to taste

1/2 tsp black pepper

1/2 cup queso fresco

4 cups couscous (fluffed with a fork to prevent clumping)

2 cups cherry tomatoes (halved or quartered into bite-sized pieces)

1/4 cup fresh cilantro

1 lime (cut into 6 wedges for serving)


Instructions

  • Preheat your grill to medium-high heat.
  • In a bowl, combine shrimp, vegetable oil, salt, smoked paprika, and barbecue sauce. Toss to coat the shrimp evenly.
  • Thread the shrimp onto the skewers and grill for about 2-3 minutes per side or until cooked through and slightly charred.
  • While the shrimp are grilling, prepare the spicy mayo by mixing mayonnaise, sriracha, lime juice, and salt in a bowl. Set aside.
  • For the avocado salad, cook the corn on the grill until slightly charred, then cut the kernels off the cob.
  • In a large bowl, combine diced avocados, grilled corn, cilantro, red onion, lime juice, olive oil, salt, black pepper, and queso fresco. Gently toss to mix.
  • To assemble the bowls, place fluffed couscous at the bottom, top with the grilled shrimp, avocado salad, and cherry tomatoes. Drizzle with spicy mayo.
  • Serve the bowls garnished with fresh cilantro and lime wedges.

Notes

Feel free to adjust the spice level of the mayo by adding more or less sriracha. This dish can also be served cold for a refreshing summer meal.
