  • 4 salmon fillets (6 oz each)

  • 3 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons soy sauce (or tamari)
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 2 cloves garlic
  • minced
  • 1 teaspoon sesame oil
  • 3 cups broccoli florets
  • 2 medium carrots
  • sliced
  • 2 green onions
  • sliced for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. In a small bowl, whisk together the gochujang, soy sauce, honey or maple syrup, rice vinegar, minced garlic, and sesame oil.
  3. Place the salmon fillets on the prepared sheet pan and brush generously with the gochujang mixture.
  4. Arrange the broccoli florets and sliced carrots around the salmon on the sheet pan.
  5. Drizzle the vegetables with olive oil and season with salt and pepper. Toss to coat.
  6. Bake in the preheated oven for about 20 minutes or until the salmon flakes easily with a fork and the vegetables are tender.
  7. Remove from the oven and garnish with sliced green onions before serving.

Notes

Make sure to use skin-on salmon for the best flavor and texture. You can substitute any seasonal vegetables for the broccoli and carrots.
