  • 3 pounds onions

  • ¾ cup dry white wine
  • 1 tablespoon dry sherry
  • 2 tablespoons all-purpose flour
  • 8 cups beef broth or beef stock
  • 1 bay leaf
  • 2 fresh thyme sprigs
  • ½ teaspoon Worcestershire sauce
  • 1 small baguette
  • 6 ounces Gruyère cheese
  • Optional: fresh thyme leaves or chopped chives

Instructions

  1. In a large pot, melt the butter and olive oil over medium heat. Add the onions, salt, and pepper, and cook, stirring often, until the onions are soft and caramelized, about 20-25 minutes.
  2. Stir in the wine and sherry, cooking until reduced by half. Sprinkle in the flour and stir to combine, cooking for another 1-2 minutes.
  3. Slowly add the beef broth, bay leaf, fresh thyme, and Worcestershire sauce. Bring to a simmer and cook for another 20 minutes, allowing flavors to blend.
  4. Preheat the oven to 400°F (200°C). Slice the baguette and place the slices on a baking sheet. Toast in the oven until golden brown, about 5-7 minutes.
  5. To serve, ladle the soup into bowls, top with toasted baguette slices, and sprinkle generously with Gruyère cheese. Place under the broiler for a few minutes until the cheese is bubbly and golden.
  6. Garnish with fresh thyme leaves or chopped chives if desired and enjoy!

Notes

For a lighter version, you can replace the white wine with additional broth. If you prefer a vegetarian option, use vegetable broth and omit the Worcestershire sauce.
