Ingredients

  • 4 large flour tortillas
  • 6 large eggs
  • 1 cup cheddar cheese
  • 1 cup cooked sausage or bacon
  • 1 cup fresh veggies
  • ½ cup sour cream or Greek yogurt
  • hot sauce to taste

Instructions

  1. In a large skillet over medium heat, scramble the eggs until fluffy, then set aside.
  2. On each tortilla, layer the cooked eggs, shredded cheese, chopped sausage or bacon, diced veggies, and a dollop of sour cream.
  3. Fold the sides of the tortilla inward, and then roll up to create a wrap.
  4. In the same skillet, heat a small amount of oil and place the wraps seam-side down. Cook until golden brown and crispy on both sides.
  5. Serve warm with hot sauce on the side for an extra kick.
