Description
This Easy Creamy Butternut Squash Pasta Sauce combines the sweet and nutty flavors of butternut squash with ripe tomatoes for a deliciously creamy pasta dish that’s perfect for any weeknight meal.

- 16 oz bag of frozen diced butternut squash
- 1.5 cups fresh chopped tomatoes
- 1/2 yellow onion
- 2 tbsp olive oil
- 1 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried thyme
- 1 lb pasta
- 1/3 cup pasta water reserved from cooked pasta
Instructions
- In a large pot, heat the olive oil over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
- Add the frozen butternut squash, chopped tomatoes, salt, black pepper, and thyme. Cook for about 15 minutes, until the squash is tender.
- While the sauce is cooking, prepare the pasta according to package instructions. Reserve 1/3 cup of pasta water before draining.
- Blend the butternut squash mixture using an immersion blender until creamy. If it’s too thick, add some of the reserved pasta water to reach your desired consistency.
- Toss the pasta with the creamy butternut squash sauce until well coated. Serve warm.
Notes
Feel free to adjust the seasoning according to your palate. Adding Parmesan cheese can enhance the flavor even more.
