- 1 teaspoon vanilla extract
- 1 cup fresh strawberries

- 1 tablespoon lemon juice
- 1 cup fresh strawberries
- sliced
- 1 tablespoon sugar-free strawberry preserves (optional)
Instructions
- In a mixing bowl, combine almond flour, melted butter, powdered sweetener, and cinnamon. Mix until well combined, then press the mixture firmly into the bottom of a springform pan to form the crust.
- In a separate bowl, beat the softened cream cheese until smooth. Slowly add in the heavy whipping cream and beat until fluffy.
- Add in powdered sweetener, vanilla extract, pureed strawberries, and lemon juice. Mix until all ingredients are fully incorporated.
- Pour the cheesecake filling over the prepared crust and smooth the top. Chill in the refrigerator for at least 4 hours or until set.
- Before serving, top with sliced strawberries and, if desired, a dollop of sugar-free strawberry preserves.
Notes
Ensure the cream cheese is well softened to avoid lumps in the filling. Replace fresh strawberries with other fruits if desired, keeping the sugar-free aspect in mind.
