1 3/4 cups rhubarb

1/4 cup rhubarb

2 tbsp sugar


Instructions

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the sour cream, lemon zest, and vanilla essence, mixing until well combined.
  • Beat in the eggs one at a time, ensuring each is fully incorporated.
  • In a separate bowl, whisk together the flour, baking powder, salt, and ground cardamom.
  • Gradually fold the dry ingredients into the wet mixture until just combined, then gently stir in the diced rhubarb.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • For the topping, arrange the thinly sliced rhubarb on top and sprinkle with 2 tablespoons of sugar.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
