1 1/2 tbsp lemon zest
1 1/2 tsp vanilla essence

1 3/4 cups rhubarb
1/4 cup rhubarb
2 tbsp sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the sour cream, lemon zest, and vanilla essence, mixing until well combined.
- Beat in the eggs one at a time, ensuring each is fully incorporated.
- In a separate bowl, whisk together the flour, baking powder, salt, and ground cardamom.
- Gradually fold the dry ingredients into the wet mixture until just combined, then gently stir in the diced rhubarb.
- Pour the batter into the prepared loaf pan and smooth the top.
- For the topping, arrange the thinly sliced rhubarb on top and sprinkle with 2 tablespoons of sugar.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
