Description

These Delicious Lemon Rhubarb Bars are a perfect blend of tangy rhubarb and zesty lemon, topped on a buttery crust, making them an irresistible treat.


Ingredients

1 cup flour (King Arthur all-purpose flour)

1/3 cup butter (cold and cut into 1/2-inch cubes)

1/4 cup sugar

1/4 tsp salt

2 cups rhubarb (sliced into 1/4-inch thick pieces)

3 eggs

1 1/4 cups sugar

1/2 cup flour

1/4 cup lemon juice (freshly squeezed)

2 tbsp lemon zest

1/2 tsp vanilla extract


Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  • In a medium bowl, combine 1 cup flour, 1/4 cup sugar, 1/4 tsp salt, and cold butter. Mix until crumbly.
  • Press the crumbly mixture into the bottom of the prepared baking dish to form the crust.
  • Bake for 15-20 minutes, or until lightly golden.
  • While the crust is baking, prepare the filling by mixing together the rhubarb, 3 eggs, 1 1/4 cups sugar, 1/2 cup flour, lemon juice, lemon zest, and vanilla extract in a bowl until well combined.
  • Pour the filling over the pre-baked crust.
  • Bake for an additional 25-30 minutes, or until the filling has set and is slightly golden on top.
  • Allow to cool completely before slicing into bars.

Notes

For best results, use fresh rhubarb and freshly squeezed lemon juice. These bars taste even better the next day after chilling in the fridge.
