- 2 ½ cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1 cup unsalted butter (cold and cubed)
- 6 to 8 tablespoons ice water
Instructions
- Preheat the oven to 425°F (220°C).
- In a mixing bowl, combine huckleberries, sugar, flour, lemon juice, vanilla extract, cinnamon, and salt.
- Prepare the pie crust by mixing flour, salt, and sugar, then cutting in the butter until the mixture resembles coarse crumbs.
- Gradually add ice water until the dough comes together, then shape it into a disk and refrigerate for 30 minutes.
- Roll out half of the dough and fit it into a pie pan, fill with the huckleberry mixture.
- Roll out the second half of the dough and place over the filling, sealing edges and cutting slits for steam.
- Bake for 30-35 minutes or until crust is golden brown and filling is bubbly.
