  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/2 cup (120ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) buttermilk
  • 1/2 cup (60g) all-purpose flour (for streusel)
  • 1/3 cup (70g) granulated sugar (for streusel)
  • 1/2 teaspoon cinnamon (for streusel)
  • 1/4 cup (60g) cold unsalted butter (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Peel, core, and slice the apples, then set them aside.
  3. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl, beat the eggs, vegetable oil, vanilla extract, and buttermilk until well combined.
  5. Gradually add the wet mixture to the dry ingredients, mixing until just combined.
  6. Fold in the sliced apples gently.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. To make the streusel topping, combine the flour, sugar, and cinnamon in a bowl, then cut in the cold butter until crumbly.
  9. Sprinkle the streusel over the apple cake batter.
  10. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  11. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

You can substitute the all-purpose flour with whole wheat pastry flour for a nuttier flavor. Adjust cinnamon according to your taste preference.
