  • 1/2 tsp cinnamon
  • 2 eggs
  • 1/3 cup milk
  • 1 tablespoon melted butter
  • 11/4 cups diced peaches
  • granulated sugar in flat-sided bowl or a powdered sugar glaze
  • oil for fryer or deep frying pan
  • 1 cup powdered sugar
  • milk enough to make a drizzling consistency

Instructions

  1. In a bowl, combine flour, salt, baking powder, sugar, and cinnamon.
  2. In another bowl, whisk together the eggs, milk, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Fold in the diced peaches gently until evenly distributed.
  5. Heat oil in a deep frying pan over medium heat.
  6. Scoop spoonfuls of the batter into the hot oil and fry until golden brown on each side, about 3-4 minutes per side.
  7. Remove fritters and drain on paper towels.
  8. For the glaze, whisk together powdered sugar and enough milk to reach a drizzling consistency.
