Instructions
- In a large pot, heat a mix of butter and olive oil over medium heat. Add diced onions and sauté until they become translucent.
- Add cubed potatoes and clam juice (or water) to the pot. Cook for about 15 minutes or until the potatoes are tender.
- Scald the whole milk in a separate saucepan and gradually stir it into the pot along with heavy cream.
- Gently add the fish fillets, thyme, bay leaves, and ground nutmeg. Simmer until the fish is cooked through, about 5-10 minutes.
- Season with salt, pepper, and fresh chives before serving.
