Description

Tender, slow-cooked beef combined with tangy pepperoncini, ranch seasoning, au jus gravy, butter, and soft egg noodles. This hearty one-pot comfort food is easy to prepare and packed with savory flavor.


Ingredients

  • 3 lbs beef chuck roast
  • 1 packet ranch dressing mix
  • 1 packet au jus gravy mix
  • 46 pepperoncini peppers
  • 1/4 cup butter
  • 16 oz egg noodles
  • Optional: garlic cloves or garlic powder
  • Optional: onion powder or sliced onions
  • Optional: Worcestershire sauce
  • Optional: splash of pepperoncini juice or beef broth

Instructions

  1. Trim any large areas of visible fat from the chuck roast and lightly grease the crockpot.
  2. Optional: Sear the beef in a hot skillet with 1 tablespoon olive oil for additional flavor.
  3. Place the chuck roast in the bottom of the crockpot.
  4. Sprinkle the ranch seasoning and au jus gravy mix evenly over the beef.
  5. Add the pepperoncini and place the butter on top.
  6. Cover and cook on Low for 8 hours or High for 4–5 hours, until the beef is tender.
  7. About 30–40 minutes before serving, remove the beef and shred it with two forks.
  8. Return the shredded beef to the crockpot and stir in the egg noodles.
  9. Cook until the noodles are tender. If they absorb too much liquid, add a splash of beef broth.
  10. Serve warm, optionally garnished with fresh parsley or grated Parmesan.

Notes

  • A well-marbled chuck roast is recommended for the most tender, flavorful beef.
  • Egg noodles can be substituted with fettuccine, pappardelle, rotini, or gluten-free pasta.
  • Add noodles near the end of cooking to prevent them from becoming too soft.
  • Leftovers can be refrigerated in an airtight container for up to 3 days. Add a splash of beef broth or water when reheating.
  • Pepperoncini can be replaced with banana peppers or mild pickled peppers, or omitted for a milder dish.
