This comforting Crockpot Chicken Gnocchi Soup is perfect for chilly evenings, packed with tender chicken, nutritious veggies, and pillowy gnocchi in a creamy broth.

- ½ medium yellow onion diced (about ½ cup)
- 1 cup grated carrots
- 2–3 medium if shredding fresh
- 3 medium sticks celery sliced (about 1 cup)
- 1 pound boneless
- skinless chicken breasts
- salt & pepper to taste
- 4 cups low-sodium chicken broth
- ½ teaspoon dried garlic powder
- ½ teaspoon dried thyme
- ½ teaspoon dried rosemary
- 1 clove garlic minced
- 1 tablespoon cornstarch add 2 tablespoons for a thicker soup
- 1 (12-oz) can evaporated milk
- 1 (17.5-oz) package gnocchi
- 3 cups baby spinach add more or less to taste
Instructions
- In your crockpot, add the diced onion, grated carrots, sliced celery, and boneless chicken breasts. Season with salt and pepper to taste.
- Pour in the low-sodium chicken broth, then sprinkle in the dried garlic powder, thyme, rosemary, and minced garlic. Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, remove the chicken and shred it using two forks. Return the shredded chicken to the crockpot.
- In a small bowl, mix the cornstarch with a little water to form a slurry, then stir it into the soup to thicken.
- Add the evaporated milk and gnocchi, and continue to cook for an additional 30 minutes on high until the gnocchi is tender.
- Finally, stir in the baby spinach until wilted. Serve hot.
Notes
To make this soup thicker, you can increase the cornstarch to 2 tablespoons. Adjust the amount of spinach based on your preference.
