- 2 lbs (900g) boneless skinless chicken breasts
- 2 tbsp (30g) Cajun seasoning blend
- 1/2 cup (115g) unsalted butter cubed
- 1/2 cup (120ml) chicken broth
- 1/2 cup (120ml) heavy cream
- 1 tbsp (15g) cornstarch mixed with 1 tbsp (15ml) cold water
- 1 cup (200g) long grain white rice uncooked
- 2 tbsp (10g) fresh green parsley finely chopped
- 1 tsp (2g) coarse black pepper
- 1/2 tsp (1g) red paprika flakes
Instructions
- Place the chicken breasts in the crockpot and sprinkle them with Cajun seasoning.
- Add the cubed butter, chicken broth, heavy cream, black pepper, and red paprika flakes. Stir gently to combine.
- Cover and cook on low for 4-6 hours or high for 2-3 hours, until the chicken is cooked through.
- Once cooked, remove the chicken and shred it with two forks. Return it to the crockpot.
- Mix the cornstarch with cold water and stir it into the sauce to thicken.
- In a separate pot, cook the rice according to package instructions.
- Serve the creamy Cajun chicken over the rice, garnished with fresh parsley.
Notes
For extra heat, feel free to add more Cajun seasoning. This dish pairs well with a side of vegetables.
