Description
Deliciously tender chicken thighs slow-cooked in a rich tomato sauce with vegetables and Italian herbs.
Ingredients

1 onion (sliced)
1 green bell pepper (seeded and sliced)
6 oz tomato paste (no salt added)
14 1/2 oz diced tomatoes
3 cloves garlic (minced)
1 tbsp Italian seasoning
medium chicken thighs (skins removed)
Instructions
- In a crock pot, layer the sliced onion and green bell pepper at the bottom.
- Add the minced garlic and Italian seasoning on top of the vegetables.
- Place the chicken thighs over the mixed ingredients.
- Spread the tomato paste and diced tomatoes evenly over the chicken.
- Cover and cook on low for about 6 hours or on high for 3-4 hours until the chicken is tender.
- Serve hot, garnished with fresh herbs if desired.
Notes
For extra depth of flavor, consider adding a splash of red wine or some olives.
