This hearty Crock Pot Beef Stew is the perfect comfort food for busy days, filled with tender beef, hearty vegetables, and a rich, flavorful broth.

- 2 packages (1 ounce
- each) dry onion soup mix
- 1/2 teaspoon paprika
- 2 pounds beef stew meat
- cut in 1-inch pieces
- 5 medium potatoes peeled and diced
- 2 to 3 cups baby carrots
- 1 small yellow onion chopped
- 2 cans (10 ounces
- each) cream of celery soup
- 1 cup ketchup
Instructions
- In a large bowl, combine the dry onion soup mix and paprika.
- Add the beef stew meat and coat it well with the mixture.
- In your Crock Pot, layer the diced potatoes, baby carrots, and chopped onion.
- Place the coated beef on top of the vegetables.
- In a separate bowl, mix the cream of celery soup and ketchup (or tomato sauce), and pour it over the beef and vegetables.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.

Feel free to adjust the vegetables based on your preference or what’s in season. This stew tastes even better the next day!
