Description

This hearty Crock Pot Beef Stew is the perfect comfort food for busy days, filled with tender beef, hearty vegetables, and a rich, flavorful broth.


Ingredients

  • 2 packages (1 ounce
  • each) dry onion soup mix
  • 1/2 teaspoon paprika
  • 2 pounds beef stew meat
  • cut in 1-inch pieces
  • 5 medium potatoes peeled and diced
  • 2 to 3 cups baby carrots
  • 1 small yellow onion chopped
  • 2 cans (10 ounces
  • each) cream of celery soup
  • 1 cup ketchup

Instructions

  1. In a large bowl, combine the dry onion soup mix and paprika.
  2. Add the beef stew meat and coat it well with the mixture.
  3. In your Crock Pot, layer the diced potatoes, baby carrots, and chopped onion.
  4. Place the coated beef on top of the vegetables.
  5. In a separate bowl, mix the cream of celery soup and ketchup (or tomato sauce), and pour it over the beef and vegetables.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.
