Description

Crispy Zucchini Fries with Garlic Aioli are a delicious and healthy snack or side dish, featuring baked zucchini sticks coated in a crunchy panko and Parmesan crust, served with a creamy homemade garlic aioli.

Ingredients

Scale
  • 3 medium zucchinis cut into sticks (34 inches long)
  • ½ cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • ½ cup Parmesan cheese grated
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • olive oil spray for baking or air frying
  • ½ cup mayonnaise
  • 1 clove garlic finely grated or minced
  • 1 teaspoon lemon juice
  • 1 pinch salt and pepper

Instructions

  1. Preheat your oven to 425°F (220°C) or prepare your air fryer according to the manufacturer’s instructions.
  2. Prepare three shallow dishes: Place the flour in one, the beaten eggs in the second, and mix the panko breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper in the third.
  3. Dip each zucchini stick first into the flour, then into the egg, and finally coat with the panko mixture, pressing lightly to adhere.
  4. Arrange the coated zucchini fries on a baking sheet lined with parchment paper or in the air fryer basket, spray lightly with olive oil.
  5. Bake for 20-25 minutes or air fry for about 15-20 minutes, turning halfway through, until golden brown and crispy.
  6. While the fries are baking, prepare the garlic aioli by mixing mayonnaise, minced garlic, lemon juice, salt, and pepper in a small bowl.
  7. Serve the crispy zucchini fries warm with the garlic aioli for dipping.

Notes

Feel free to experiment with different seasonings or cheeses in the panko mixture for added flavor.
