- 2 medium zucchinis (about 400 g)
- 150 g feta cheese (crumbled)
- 1 egg
- 50 g breadcrumbs
- 2 tbsp oats (optional)
- 2 tbsp freshly chopped parsley
- 1 clove garlic (finely chopped)
- 1 tsp dried oregano
- 1 tsp salt
- ½ tsp pepper
- 2 tbsp olive oil
Instructions
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
- In a large mixing bowl, combine the grated zucchini, crumbled feta, egg, breadcrumbs, oats (if using), parsley, chopped garlic, oregano, salt, and pepper.
- Mix until well combined, and then shape the mixture into small balls.
- Place the balls on the prepared baking sheet and brush with olive oil.
- Bake for 25-30 minutes, or until golden brown and crispy, turning halfway through.
- Serve warm and enjoy!
