- Chicken tenders – 1½ pounds
- Buttermilk – 1 cup
- Large egg – 1
- All-purpose flour – 1½ cups
- Cornstarch – ¼ cup
- Garlic powder – 1 teaspoon
- Onion powder – 1 teaspoon
- Smoked paprika – 1 teaspoon
- Kosher salt – 1¼ teaspoons
- Black pepper – ½ teaspoon
- Neutral oil (like peanut or canola) – about 3 cups
- Optional Add-Ins: Cayenne pepper – ¼ teaspoon
- Dried oregano – ½ teaspoon
Instructions
- In a large bowl, combine chicken tenders and buttermilk. Cover and refrigerate for at least 30 minutes.
- In another bowl, whisk together the egg, flour, cornstarch, garlic powder, onion powder, smoked paprika, 1 teaspoon of salt, and black pepper.
- Heat the oil in a deep pan to 350°F (175°C).
- Dip each chicken tender into the egg mixture, ensuring it’s well coated, then carefully place it in the hot oil.
- Fry the chicken tenders in batches for about 4–5 minutes, or until they are golden brown and cooked through. Use a thermometer to ensure they reach an internal temperature of 165°F (74°C).
- Remove the chicken tenders and place them on a paper towel-lined plate to drain excess oil.
- Serve hot with your favorite dipping sauce.
