- skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup Caesar dressing
- 4 sandwich buns or ciabatta rolls
- 2 cups romaine lettuce

- 1/4 cup grated Parmesan cheese (extra for topping)
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400 degrees F (200 degrees C) and line a baking sheet with parchment paper.
- Prepare three shallow bowls: place the flour in the first bowl, beat the eggs in the second bowl, and combine breadcrumbs, 1/2 cup Parmesan, garlic powder, salt, and pepper in the third bowl.
- Dredge each chicken breast first in the flour, then dip in the beaten eggs, and finally coat with the breadcrumb mixture.
- Heat olive oil in a skillet over medium-high heat and cook the chicken breasts for about 3-4 minutes on each side until golden brown.
- Transfer the chicken to the prepared baking sheet and bake in the preheated oven for 15-20 minutes until fully cooked.
- To assemble the sandwiches, spread Caesar dressing on the insides of the buns, layer with chopped romaine, and top with the crispy chicken.
- Sprinkle additional Parmesan cheese on top and close the sandwiches. Serve immediately.
Notes
For extra flavor, marinate the chicken in a bit of Caesar dressing before breading. You can also add tomatoes or bacon for a twist!
