- 1 cup all-purpose flour
- 1 cup Parmesan cheese

- 1 teaspoon Italian seasoning

- 2 large eggs beaten
- 1 cup bread crumbs

Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Cut the zucchini into fry-shaped pieces.
- In a shallow dish, mix the flour, garlic powder, Italian seasoning, salt, and pepper.
- In another dish, beat the eggs.
- In a third dish, combine the bread crumbs and Parmesan cheese.
- Dredge each zucchini piece in flour, dip in the beaten eggs, and coat with the bread crumb mixture.
- Place the coated zucchini fries on the prepared baking sheet and spray lightly with cooking spray.
- Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.
Notes
For extra crispiness, make sure the zucchini pieces are evenly coated and keep an eye on them towards the end of baking.
