- 1 cup heavy cream
- 20 basil leaves
- 1 teaspoon sea salt
- plus more to taste
- ½ teaspoon freshly cracked black pepper

- ¾ cup grated Parmesan cheese

Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced zucchini and shallots, sautéing until tender, about 5-7 minutes.
- Stir in the garlic and cook for an additional 1-2 minutes until fragrant.
- Meanwhile, cook the long pasta according to package instructions in a large pot of salted boiling water.
- Reserve ½ cup of the pasta water, then drain the pasta.
- Add the heavy cream to the skillet, stirring to combine, and bring to a simmer.
- Mix in the reserved pasta water, sea salt, black pepper, and basil leaves, then adjust seasoning to taste.
- Toss the cooked pasta in the sauce, ensuring it is well coated.
- Serve immediately, garnished with grated Parmesan cheese and additional black pepper.
Notes
For a lighter option, reduce the amount of heavy cream or substitute with a plant-based cream. Fresh zucchini adds a wonderful texture and flavor.
