  • such as spaghetti fusilli or bucatini
  • ½ cup pasta water
  • 1 cup heavy cream
  • 20 basil leaves
  • 1 teaspoon sea salt
  • plus more to taste
  • ½ teaspoon freshly cracked black pepper
  • plus more for serving
  • ¾ cup grated Parmesan cheese
  • plus more for serving

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced zucchini and shallots, sautéing until tender, about 5-7 minutes.
  3. Stir in the garlic and cook for an additional 1-2 minutes until fragrant.
  4. Meanwhile, cook the long pasta according to package instructions in a large pot of salted boiling water.
  5. Reserve ½ cup of the pasta water, then drain the pasta.
  6. Add the heavy cream to the skillet, stirring to combine, and bring to a simmer.
  7. Mix in the reserved pasta water, sea salt, black pepper, and basil leaves, then adjust seasoning to taste.
  8. Toss the cooked pasta in the sauce, ensuring it is well coated.
  9. Serve immediately, garnished with grated Parmesan cheese and additional black pepper.

Notes

For a lighter option, reduce the amount of heavy cream or substitute with a plant-based cream. Fresh zucchini adds a wonderful texture and flavor.
