- 2 large chicken breasts
- 1/4 teaspoon garlic powder
- Salt & pepper to taste
- Flour for dredging
- 1 tablespoon olive oil
- 3 tablespoons butter divided
- 8 ounces cremini mushrooms sliced
- 1/4 teaspoon Italian seasoning
- 2 cloves garlic minced
- 1/2 cup dry white wine
- 3/4 cup heavy/whipping cream
Instructions
- Season the chicken breasts with garlic powder, salt, and pepper, then dredge them in flour.
- In a large skillet, heat olive oil over medium heat and add 1 tablespoon of butter. Once melted, add the chicken breasts and cook until browned on both sides and cooked through, about 6-7 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add the remaining butter and sliced mushrooms. Sauté until the mushrooms are browned, about 5-6 minutes. Stir in Italian seasoning and minced garlic, cooking for another minute.
- Pour in the dry white wine and scrape up any brown bits from the bottom. Let it simmer for about 2-3 minutes.
- Reduce the heat to low and stir in the heavy cream. Cook for another 3-4 minutes until the sauce thickens slightly.
- Return the cooked chicken to the skillet, spooning some sauce over the top. Let it warm through for a couple of minutes.
- Serve the creamy white wine mushroom chicken over pasta or rice, garnished with fresh herbs if desired.
Notes
For a lighter version, you can substitute half and half for the heavy cream.
