- 1 lb ground turkey
- 2 tablespoon butter
- ½ white onion chopped
- 2 cloves garlic minced
- 3 14 oz cans of cannellini beans drained and rinsed
- 4 cups chicken broth
- 4 ounces canned diced green chilies
- 2 teaspoon ground cumin
- 1 teaspoon ground basil
- ½ teaspoon cayenne pepper optional
- ½ teaspoon red chili flakes optional
- 1 tablespoon chili powder
- 3 cups Monterey Jack/Colby shredded cheese
- 8 oz sour cream
- Fritos for topping
- chopped green onions for topping
Instructions
- In a large pot, melt butter over medium heat and sauté the chopped onion until translucent.
- Add the minced garlic and ground turkey, cooking until the turkey is browned.
- Stir in the drained cannellini beans, chicken broth, diced green chilies, cumin, basil, cayenne pepper, red chili flakes, and chili powder.
- Bring the mixture to a simmer and let cook for about 20 minutes, stirring occasionally.
- Incorporate the shredded cheese and sour cream, stirring until melted and creamy.
- Serve hot, topped with Fritos and chopped green onions.
Notes
For added spice, adjust the optional cayenne pepper and red chili flakes according to your taste. This chili can also be made ahead and freezes well.
