Ingredients
1 Tbsp. extra-virgin olive oil
4 (6- to 8-oz.) boneless
skinless chicken breasts
Kosher salt
Freshly ground black pepper
1 tsp. dried oregano
3 Tbsp. unsalted butter
3 garlic cloves
minced
1 1/2 cups cherry tomatoes
halved
3 cups baby spinach
1/2 cup heavy cream
1/2 oz. Parmesan
finely grated (about 1/4 cup)
Lemon wedges
for serving
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt, pepper, and oregano.
- Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken and set aside.
- In the same skillet, melt the butter and sauté the minced garlic until fragrant, about 1 minute.
- Add the cherry tomatoes and cook for 2-3 minutes until they begin to soften.
- Stir in the baby spinach and cook until wilted, about 2 minutes.
- Pour in the heavy cream and stir in the Parmesan cheese until melted and combined.
- Return the chicken to the skillet, spoon the sauce over the top, and let simmer for an additional 2-3 minutes to heat through.
- Serve the creamy Tuscan chicken with lemon wedges for a fresh squeeze of flavor.
Notes
For a richer flavor, you can add a splash of white wine before adding the cream. Serve with pasta or crusty bread for a complete meal.
