- 12 oz sausage such as spicy Italian sausage
- 1 tablespoon olive oil
- 1 tablespoon Italian seasoning
- 1 teaspoon paprika regular or smoked
- 1 large sweet potato peeled cubed
- 5 cloves garlic minced
- ¼ teaspoon red pepper flakes
- 1 tablespoon tomato paste
- 6 cups water
- 8 oz tortellini I used three-cheese tortellini refrigerated – Buitoni brand
- 4 oz fresh spinach
- ½ cup heavy cream
- 4 tablespoons fresh thyme
Instructions
- In a large pot, heat olive oil over medium heat, add the sausage, and cook until browned.
- Add the Italian seasoning, paprika, sweet potato, garlic, and red pepper flakes; sauté for a few minutes until fragrant.
- Stir in the tomato paste and cook for another minute.
- Pour in 6 cups of water and bring to a boil.
- Add the tortellini and cook according to package instructions until tender.
- Stir in the fresh spinach, heavy cream, and thyme; cook until the spinach is wilted.
- Season with salt and pepper to taste, and serve hot.
Notes
Feel free to customize the soup with your favorite vegetables or spices. You can also substitute the heavy cream with a lighter option for a healthier version.
