- 2 pints cherry tomatoes
- 2 tablespoons olive oil
- 4 garlic cloves minced
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- 1 cup uncooked orzo pasta
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 8 ounces feta cheese
- ¼ cup Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Fresh basil leaves
- Chopped parsley
- Cracked black pepper
- Parmesan cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, combine cherry tomatoes, olive oil, minced garlic, Italian seasoning, salt, and black pepper. Roast for 25 minutes.
- While the tomatoes are roasting, cook the orzo in vegetable broth according to package instructions.
- For the whipped feta, blend feta cheese, Greek yogurt, olive oil, and lemon juice until smooth.
- Once the tomatoes are done, combine them with the cooked orzo.
- Serve the orzo mixture topped with whipped feta and garnish with fresh basil, parsley, cracked black pepper, and Parmesan cheese if desired.
