- 2 Honeycrisp or Gala or Sweet Tango apples sliced
- 2 Tbsps Extra virgin olive oil
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground allspice
- 1 tablespoon Extra virgin olive oil
- 1 tablespoon unsalted butter
- 3 garlic cloves minced
- 4 cups vegetable stock organic
- 1 tablespoon raw honey or maple syrup
- 4 Tbsps organic all-purpose flour
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- ½ teaspoon ground cinnamon
- ⅛ teaspoon ground allspice
- 2 cups organic pumpkin puree
- 1 cup organic heavy cream
- 1 cup freshly-grated parmesan cheese

Instructions
- Preheat your oven to 400°F (200°C). Toss the sliced apples with 2 tablespoons of olive oil, ground cinnamon, nutmeg, and allspice. Spread them on a baking sheet and roast for 25-30 minutes until tender and caramelized.
- In a large pot, heat 1 tablespoon of olive oil and the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add 4 cups of vegetable stock, raw honey or maple syrup, and the roasted apples to the pot. Bring to a simmer.
- In a separate bowl, mix the flour with a small amount of the vegetable stock to create a slurry, then slowly whisk it into the soup. Season with sea salt, black pepper, smoked paprika, garlic powder, oregano, basil, thyme, ground cinnamon, and allspice.
- Stir in the pumpkin puree and simmer for an additional 10 minutes.
- Remove from heat and blend the soup with an immersion blender until smooth. Stir in the heavy cream and grated parmesan cheese until well combined.
- Serve hot, topped with homemade croutons.
Notes
For added flavor, you can include a splash of apple cider vinegar before serving. Adjust the spices to your preference for a more personalized taste.
