  • 2 Honeycrisp or Gala or Sweet Tango apples sliced
  • 2 Tbsps Extra virgin olive oil
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground allspice
  • 1 tablespoon Extra virgin olive oil
  • 1 tablespoon unsalted butter
  • 3 garlic cloves minced
  • 4 cups vegetable stock organic
  • 1 tablespoon raw honey or maple syrup
  • 4 Tbsps organic all-purpose flour
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground allspice
  • 2 cups organic pumpkin puree
  • 1 cup organic heavy cream
  • 1 cup freshly-grated parmesan cheese
  • Homemade croutons

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the sliced apples with 2 tablespoons of olive oil, ground cinnamon, nutmeg, and allspice. Spread them on a baking sheet and roast for 25-30 minutes until tender and caramelized.
  2. In a large pot, heat 1 tablespoon of olive oil and the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add 4 cups of vegetable stock, raw honey or maple syrup, and the roasted apples to the pot. Bring to a simmer.
  4. In a separate bowl, mix the flour with a small amount of the vegetable stock to create a slurry, then slowly whisk it into the soup. Season with sea salt, black pepper, smoked paprika, garlic powder, oregano, basil, thyme, ground cinnamon, and allspice.
  5. Stir in the pumpkin puree and simmer for an additional 10 minutes.
  6. Remove from heat and blend the soup with an immersion blender until smooth. Stir in the heavy cream and grated parmesan cheese until well combined.
  7. Serve hot, topped with homemade croutons.

Notes

For added flavor, you can include a splash of apple cider vinegar before serving. Adjust the spices to your preference for a more personalized taste.
