- 1 medium pumpkin (about 2–3 pounds)

- 1 medium onion

- 2 cloves garlic
- minced
- 4 cups vegetable or chicken broth
- 1 cup coconut milk or heavy cream
- 1 tablespoon olive oil
- Salt and pepper

Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the cubed pumpkin to the pot and stir well, allowing it to cook for about 5 minutes.
- Pour in the vegetable or chicken broth, and bring the mixture to a boil. Reduce the heat and let it simmer for 20 minutes, or until the pumpkin is tender.
- Once the pumpkin is cooked, use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
- Return the soup to the pot, stir in the coconut milk or heavy cream, and season with salt and pepper to taste. Heat through and serve hot.
Notes
For added flavor, consider garnishing with pumpkin seeds or a drizzle of olive oil before serving.
