- 10 oz potato gnocchi
- 1 cup heavy cream
- ⅓ cup chicken broth
- 1 cup pumpkin puree

- 4 oz fresh spinach
- 2 tablespoons fresh sage chopped
- 2 tablespoons fresh thyme
- salt and coarsely ground black pepper to taste
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the sausage and cook until browned, breaking it apart with a spoon.
- Add the minced garlic, sage, and thyme; sauté for about 1 minute until fragrant.
- Stir in the heavy cream, chicken broth, and pumpkin puree, mixing well to combine.
- Add the potato gnocchi to the skillet and bring to a gentle simmer. Cook for about 5-7 minutes until the gnocchi floats to the top and is tender.
- In the final minute of cooking, add the fresh spinach and season with salt and coarsely ground black pepper to taste. Stir until the spinach is wilted.
