- 2 cups fresh basil leaves packed
- ½ cup pine nuts
- ½ cup grated pecorino cheese or parmesan
- 1 clove garlic peeled
- 1 teaspoon lemon zest
- ½ cup extra-virgin olive oil
- ¾ – 1 cup heavy cream
- salt and pepper
Instructions
- In a food processor, combine the basil leaves, pine nuts, pecorino cheese, garlic, and lemon zest.
- Blend until finely chopped.
- While the processor is running, slowly drizzle in the olive oil until the mixture is smooth.
- Transfer the pesto to a bowl and stir in the heavy cream until well combined.
- Season with salt and pepper to taste.
Notes
This sauce can be stored in the refrigerator for up to a week. Add more cream for a lighter flavor or serve immediately for the freshest taste.
