- 2 large chicken breasts
- Salt & pepper to taste
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 cup pesto
- 1 cup heavy/whipping cream
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat the olive oil and butter over medium heat.
- Add the seasoned chicken breasts to the skillet and cook for 6-7 minutes on each side, until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, lower the heat and add the pesto and heavy cream; stir until well combined and heated through.
- Return the chicken to the skillet, coating it with the creamy sauce.
- Serve hot, garnished with additional pesto if desired.
Notes
For a healthier option, use grilled chicken instead of pan-frying. You can also substitute homemade pesto for store-bought for better flavor.
