Ingredients
12 oz pasta (spaghetti
linguine
or your favorite shape)
1 cup whole milk ricotta cheese
1 lemon
zested and juiced
1/2 cup grated Parmesan cheese
2 cloves garlic
minced
1/4 cup reserved pasta water
Salt and freshly ground black pepper
to taste
2 tbsp olive oil
1/4 tsp red pepper flakes (optional)
Fresh basil or parsley
for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water, then drain the pasta.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes (if using), sautéing until fragrant.
- Stir in the ricotta cheese, lemon juice, and lemon zest until well combined.
- Add the cooked pasta to the skillet along with the reserved pasta water and Parmesan cheese. Season with salt and pepper to taste, tossing until the pasta is evenly coated.
- Serve warm, garnished with fresh basil or parsley.
