1 lemon

zested and juiced

1/4 cup reserved pasta water

Salt and freshly ground black pepper

to taste

2 tbsp olive oil

1/4 tsp red pepper flakes (optional)

Fresh basil or parsley

for garnish


Instructions

  • Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water, then drain the pasta.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes (if using), sautéing until fragrant.
  • Stir in the ricotta cheese, lemon juice, and lemon zest until well combined.
  • Add the cooked pasta to the skillet along with the reserved pasta water and Parmesan cheese. Season with salt and pepper to taste, tossing until the pasta is evenly coated.
  • Serve warm, garnished with fresh basil or parsley.
