  • ¾ teaspoon salt
  • divided
  • ¼ teaspoon ground pepper
  • 1 tablespoon extra-virgin olive oil
  • 1 small yellow onion
  • chopped
  • 3 medium cloves garlic
  • minced
  • ¼ teaspoon crushed red pepper
  • 1¼ cups unsalted chicken broth
  • 2 (8.8-ounce) packages precooked microwaveable brown rice
  • 1 (5-ounce) package baby spinach
  • 1 cup frozen peas
  • thawed
  • ½ cup half-and-half
  • warmed
  • 2 tablespoons grated lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh flat-leaf parsley
  • plus more for garnish
  • ½ cup goat cheese

Instructions

  1. Season the chicken cutlets with ½ teaspoon of salt and ground pepper.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken cutlets and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the chopped onion and cook for 2-3 minutes until softened. Add the minced garlic and crushed red pepper and cook for another minute.
  4. Pour in the chicken broth and stir, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
  5. Stir in the brown rice, baby spinach, thawed peas, warmed half-and-half, lemon zest, lemon juice, and remaining salt. Mix until everything is well combined and heated through.
  6. Return the chicken cutlets to the skillet, nestling them into the creamy mixture. Sprinkle with chopped parsley and goat cheese before serving.

Notes

Feel free to substitute the goat cheese with another cheese of your choice if desired. This recipe can be easily adapted by adding other vegetables or herbs.
