Ingredients
3 cups cooked chicken
shredded or chopped (rotisserie chicken recommended)
1/2 cup mayonnaise (Duke’s or Hellmann’s preferred)
1/4 cup Greek yogurt (or dairy-free coconut yogurt for dairy-free option)
1 tablespoon Dijon mustard
1/2 cup celery
finely chopped
2 tablespoons red onion
finely minced (optional)
2 tablespoons fresh parsley
chopped (flat-leaf preferred)
1 tablespoon fresh lemon juice
Salt and pepper to taste
4 large butter croissants
split horizontally
Instructions
- In a medium bowl, combine the shredded chicken, mayonnaise, Greek yogurt, and Dijon mustard.
- Add the finely chopped celery, red onion, parsley, lemon juice, salt, and pepper, and mix well until all ingredients are fully incorporated.
- Taste and adjust the seasonings if necessary.
