Description

Ingredients

  • 2 Tablespoons butter
  • 1 small yellow onion diced
  • 1 jalapeno pepper diced
  • 3 cloves garlic diced
  • 1 Tablespoon tomato paste
  • 1 15 oz. can corn drained
  • 1 10 oz. can Rotel diced tomatoes with green chilies undrained
  • 1 15 oz. can black beans drained and rinsed
  • 5 cups chicken broth
  • 2 small boneless skinless chicken breasts or 2 cups shredded chicken
  • 1 pinch Cayenne Pepper
  • 1 teaspoon cumin
  • 12 teaspoons hot sauce
  • 1 oz. packet taco seasoning about 3 Tbsp.
  • 1 ½ cups cheddar cheese shredded
  • 1/3 cup cream cheese softened

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion and jalapeno, sauté until softened, about 5 minutes.
  2. Stir in the minced garlic, cooking for an additional minute until fragrant.
  3. Add the tomato paste and cook for another minute, mixing well.
  4. Pour in the corn, diced tomatoes with green chilies, black beans, and chicken broth. Stir to combine.
  5. Add the chicken breasts, cayenne pepper, cumin, hot sauce, and taco seasoning. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. If using whole chicken breasts, remove and shred the chicken after it’s cooked, then return the shredded chicken to the pot.
  7. Stir in the cream cheese and cheddar cheese until melted and the soup is creamy.
  8. Serve hot, topped with tortilla strips.

Notes

For a crunchier texture, fry the tortillas until crispy before adding them to the soup. Feel free to adjust the level of heat by varying the amount of jalapeno and hot sauce used.
