Ingredients
Scale
- 2 cups cooked chicken breast
- diced or shredded
- 1 cup carrots
- diced
- 1 cup frozen peas
- 1 cup celery
- diced
- 1 small onion
- finely chopped
- 2 cloves garlic
- minced
- 1 1/2 cups orzo pasta
- 3 cups low-sodium chicken broth
- 1 cup whole milk
- 1/2 cup heavy cream
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried parsley (plus extra for garnish)
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt (or to taste)
Instructions
- In a large pot, melt the unsalted butter over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant.
- Stir in the carrots, celery, and frozen peas. Cook for about 5 minutes until vegetables are tender.
- Sprinkle flour over the vegetables and stir well to combine, cooking for 1-2 minutes to eliminate the raw flour taste.
- Slowly pour in the chicken broth, whisking continuously to avoid lumps. Bring to a simmer.
- Add the orzo pasta, dried thyme, parsley, salt, and black pepper. Cook according to the package instructions until the orzo is al dente.
- Stir in the cooked chicken, whole milk, and heavy cream. Let it simmer for an additional 5-10 minutes until thickened.
- Adjust seasoning to taste and garnish with extra parsley before serving.
Notes
Feel free to add other vegetables like corn or green beans based on your preference.
