Description

Creamy Baked Feta Pasta is a delicious and comforting dish made with roasted feta cheese and cherry tomatoes, combined with your favorite pasta for a creamy and savory experience.


Ingredients

  • 8 ounces block feta cheese
  • 2 pints cherry tomatoes
  • ¼ cup olive oil
  • 5 cloves garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • 12 ounces penne rotini or bowtie pasta
  • 1 tablespoon salt for pasta water
  • ¼ cup fresh basil chopped
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon lemon juice
  • Optional Add-Ins: Grilled chicken
  • Sautéed shrimp
  • Spinach
  • Kale
  • Roasted zucchini
  • Roasted bell peppers

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, combine the cherry tomatoes, feta cheese, olive oil, minced garlic, oregano, basil, black pepper, and red pepper flakes if using.
  3. Bake in the preheated oven for about 30 minutes, until the tomatoes burst and the feta is golden and soft.
  4. While the feta is baking, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente.
  5. Reserve 1 cup of pasta water, then drain the pasta.
  6. Once the feta and tomatoes are done, mash them together in the baking dish.
  7. Add the cooked pasta to the baking dish, along with fresh basil, parsley, lemon juice, and enough reserved pasta water to reach your desired creaminess.
  8. Mix everything well to combine and serve hot, optionally adding grilled chicken, sautéed shrimp, or other add-ins as desired.
