- 4 pieces bone-in chicken breasts or thighs
- skin removed if desired
- 2 large sweet potatoes peeled and sliced into thin rounds
- 3 cloves garlic minced
- 1 tablespoon fresh sage chopped
- 1 cup heavy cream for the sauce
- 1 cup shredded cheese cheddar or mozzarella
- 2 tablespoons olive oil
- to taste salt and pepper for seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat and add garlic, cooking until fragrant.
- Add the chicken pieces to the skillet and sear until golden brown on both sides, about 5 minutes per side.
- In a baking dish, layer sweet potato rounds and season with salt, pepper, and fresh sage.
- Place the seared chicken on top of the sweet potatoes.
- Pour heavy cream over the chicken and sweet potatoes, then sprinkle shredded cheese on top.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the chicken is cooked through and the cheese is bubbly.
- Let the casserole rest for a few minutes before serving.
